Harvest : Traditional
Maceration in temperature-controlled stainless steel vats. At the beginning of the fermentation, we do pumping over the cap in order to keep all the tan-nins and colours that will structure the wine. Followed by two rack & return. Controlling temperature at this stage is very important. Around 25°C, the wine is going to develop all its primary aromas and showing its potential. We apply horizontal pneumatic pressing with slow rising pressure to avoid the extraction of “green” tannins. Then the wine undergoes to malolactic fermentation followed by clarification & filtration.
Ageing : 10 month in stainless steel tanks.
Bottling : At the estate in 750 ML.
Appearance: very deep & intense purple with glints of rubis.
Aroma: nose full of blackcurrant with a finish note of licorice and soft spices.
Taste: a firm palate, medium bodied and rounded wine well balanced. The aromas hold the fruit with a light touch of spices in the finish.
Serve with : With cooked meat, pot & roast, perfect with Southern West cuisine. Wonderful with Magret of Duck with cranberries.
Serve at : 18°C
Consume within : Dry Red Wine that can be kept up to 5 years.
