Harvest : Traditional
Destalking, pneumatic pressing, alcoholic fermentation at low temperature. The liquid is then drawn off from the bottom of the vat and put back in on top of the residue for the optimum extraction of the colour and tannins (temperature maintained at around 25° to allow the aromas to develop), pressing then malolactic fermentation.
Ageing : 2 years in vats.
Bottling : On the premises.
Powerful, balanced and complex with red fruit aromas.
Full-bodied, supple and rewarding evoking blackcurrant and raspberry with a lightly spicy finish.
Serve with : Roasted meats. Grilled meats or those accompanied by a sauce. Game. Cheese. Chocolate.
